With Valentine's Day being only one week a way, can you think of a better to celebrate than with chocolate?
I can. How about celebrating with chocolate cookies? I present you with a healthier (and gluten-free) cookie recipe that is easy to prepare for someone you love. Inspired by Oh She Glows.
2 cups buckwheat flour*
1/2 cup cocoa powder
Pinch of sea salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup almond butter
3/4 cup maple syrup
1/4 cup milk (soy, almond, or cow's)
1 teaspoon vanilla
1/2 cup chocolate chips
*All-purpose flour or whole wheat flour can be used instead of buckwheat. Mix the dry in a bowl. Mix the wet in a second bowl. Add the wet to the dry. Mix well (feel free to use your hands to mash everything up!). Fold in the chocolate chips. Roll dough into balls and press slightly onto a greased cookie sheet (or on parchment paper). Bake for 10 minutes exactly at 350F. Depending on the size of the pan, baking may require two batches. Makes 30 small but lovely cookies.
