Bake-Off Pictures.







As promised, here are some bake-off pics. Here is the event's poster (left), my entry display (center left, the cookies are the spots on the lady bug!), the winning entry (center right, Dulce-de-leuce cupcake), and one of my favorite entries: The Lumberjack (a maple "bacon" cupcake (top left)), and the g-free chocolate category plate of goodies (far right).

Lady Bites

A fudgey, doughy, peanut-butter-chocolatey, bite of bliss!
With only four ingredients, who says that vegan, gluten-free, and refined sugar-free baking is hard?

1 1/4 cup buckwheat flour
1/2 cup cocoa powder
1/2 cup peanut butter
3/4 cup maple syrup

Combine the dry. Combine the wet. Mix the wet into the dry, using your hands to form a thick dough. Roll (in your palms) into 1-inch wide balls. Bake for 10 min at 350F. Makes 30 little bites.

  2. Marinated coconut (the thick flake kind!). Very impressive; tasted porky too mo!
