It's stew season, so here is my favorite go-to stew recipe (inspired by my classmate T's recipe):
Balsamic Lentil Stew
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, minced
1 red pepper, chopped
2 sweet potatoes, peeled and cubed
2 carrots, chopped
2 tomatoes, chopped
1 cup red lentils
6 cups veggie broth or water
1 small bunch kale (about 2 full cups)
2-3 tablespoons balsamic vinegar (to taste)
1 teaspoon red chili flakes (or more if you want it spicy!)
Salt & pepper to taste
Bring big pot with water or broth to a boil and add the lentils. Saute veg in the oil for 5 minutes then add to the pot with lentils. Simmer on medium heat for 20-30 minutes or until lentils and sweet potatoes are soft. Then, add the kale, vinegar, and spices. Let cook for 5 more minutes, then serve.
