Carrot Cake Smoothie
Have your cake, and DRINK it too! Inspired by this recipe.
However, it tastes more like pumpkin pie than carrot cake to me. Although it is raw, the warming ingredients (dates, ginger, and cinnamon) make it suitable to drink even on cold weathered days.
Tony and I have been enjoying this smoothie as an afternoon snack all this week. Yum!

1 large carrot
3 fresh dates (or a 1/4 cup dried, baking dates)
2 teaspoons molasses
1 tablespoon flax seeds (optional, adds thickness)
1/4 cup unsweetened coconut shreds, almonds, or cashews (adds creaminess)
1 teaspoon cinnamon
1/2 chunk of fresh ginger
1 cup water, milk, or mylk
Protein powder (optional)
Place all ingredients into a blender. Blend until smooth. Pour into glasses. Serves 1-2.
