Happy Day of Love, Everyone!

Since today as yet another sugar holiday (hmm, are there any holidays that don't revolve around sugar?), I decided to bake up some cookies (however mine are technically sugar-free, they contain coconut sugar which is derived from coconut sap). They're the perfect little treat to share with those you love. Inspired by this recipe. Makes 14 gluten-free, dairy-free, refined-sugar cookies.

Classic Chocolate Chip Cookies

Slightly less than 1/2 cup margarine
1 tablespoon vegetable oil
3/4 cup coconut sugar
1 egg, beaten
1 teaspoon vanilla
1/2 teaspoon each baking soda, salt, and cinnamon
1 3/4 - 2 cups oat flour
1/2 cup chocolate chunks

Mix the dry. Cream the oil, margarine, vanilla, egg, and sugar together. Combine the creamed ingredients with the dry. Fold in the chocolate chunks. Bake at 350F for 10-12 minutes.

...and just because it is V-Day, I serve these cookies with a big glass of milk that was dyed pink with a bit of beet juice. Don't worry, it didn't taste like a vegetable; it just tasted like cool and creamy just like nut mylk should taste.
