Happy April Fool's Day! Allow me to present this fun meal to fool your loved ones.
"Meat Cupcakes"
There are three tricks to this April Fool's Day dinner:
First, despite being shaped like dessert, this is a meatloaf dinner; second, it tastes like meatloaf and mashed potatoes, but it contains no meat (lentils act as meat) and cauliflower replaces the taters; and third, it's "iced" with cauliflower mash and chive "sprinkles" (using a naturally orange cauliflower, found at the grocery store).

1 can (or 1.5 cups) lentils or beans, cooked and mashed
Good pinch of paprika, garlic powder, cumin, and black pepper

1 onion, diced
1/2 cup mushrooms, diced
1 carrot, diced
1/4 cup soy sauce
1 egg, whisked
1/4 cup oatmeal
Saute the vegetables in a bit of oil. Combine the veggies with the remaining ingredients in a bowl, place into muffin tins and bake at 350F for 30 minutes. In the meantime, prepare the cauliflower mash. Pipe (or spread) onto the slightly cooled "meat cupcakes". Garnish with chive "sprinkles". Makes 10. Recipe idea inspired by this image.
Now since you had cupcakes for dinner, you need some dinner for dessert, right?
"Mashed Potatoes & Gravy"
Mash up two bananas (the potatoes) and top with peanut butter mixed with a wee bit of maple syrup or honey and some cinnamon (the gravy).
