Simple Strawberry-Chocolate Cake.

It's like one giant chocolate-covered strawberry!

This chocolate cake is super easy to make and magically doesn't require any eggs or dairy.  The perfect cake to make when in a pinch!  I topped mine with a fresh (and local!) strawberry frosting, but feel free to eat the cake plain or top it with whatever frosting/icing tickles your fancy. This can be your go-to recipe this season; the season of birthdays, anniversary, and celebrations galore!

1 1/2 cups flour*
1 cup organic sugar
1/4 cup cocoa powder
1 teaspoon baking soda
Pinch of salt

1 tablespoon each vanilla and vinegar
1/4 cup oil (I used coconut)
1 cup water

Mix the wet, mix the dry, combine. Bake at 350F in a parchment paper-lined or well-greased baking pan (9x9 or 8x8) for ~45 minutes. Let cake cool on a wire rack. *I used gluten-free all-purpose + 1/2 teaspoon xanthan gum.  

When the cake is completely cool, top with strawberry frosting (2 tablespoons solid coconut oil (or butter), mixed with 1 cup powdered/icing sugar, and 1 cup mashed strawberries... all mashed together in a bowl then spread onto the cake). Keep cake refrigerated, then let thaw on the counter for 20-30 minutes before serving.
