Dessert, Anyone?

I made this apple crisp for family when they came to visit this week gone by. Each serving has one tablespoon of sugar, which is very low for a dessert. Topped with cashew cream, this simple dessert becomes pretty fancy.

Low Sugar Apple Crisp

6 medium-sized apples, peel and sliced
1 cup oats
1/2 cup flour*
1/4 cup sugar
1/4 cup coconut oil or butter
2 tablespoons honey
2 teaspoons cinnamon
Pinch of salt

*If making gluten-free, use 1/4 cup buckwheat or brown rice flour and 1/4 cup arrowroot flour.

Place apples in a baking dish. Mix the dry ingredients in a bowl, then crumble in the coconut oil (or butter) and honey into them. Top the apples with the crumbly topping. Bake at 375F for 30 minutes. Serves 6.

Cashew Cream

1 cup cashews
1/3 cup water
1 teaspoon vanilla

Blend all ingredients in a blender. Refrigerate before serving (this gives it time to thicken-up). Add a dollop to each serving of the apple crisp above. Serves 6.
